Lilac Simple Syrup

Making lilac-infused syrup is the easiest way to bottle the sweet taste of these beautiful blooms!

You can use this floral syrup to create a spring cocktail, add it to teas, and lemonades, and experiment with it in recipes. I also like to pour this syrup over pancakes, french toast, or a bowl of fruits.


Every year I make this syrup to preserve Lilac season for a little longer. I often double or triple the batch to offer as a gift to friends and family. Processing the blooms is time-consuming and repetitive, but all those efforts will be more than worth it once you taste this delicious decoction.


This sweet nectar is such a treat, and a little bit goes a long way!


• The Ingredients •

2 cups of filtered water

2 cups of granulated sugar

3 cups of fresh lilac blooms


• The Recipe •

Prepare your ingredients with intention. Remove the lilac flowers from the stems and place them into a bowl. This can take a while, so use this time to meditate and focus on your intent.


Rinse your lilac buds under running water, drain and repeat 2-3 times.


Light a candle before starting and set your intention. Ask for guidance from your spirit guides and ancestors, and say thank you to the plant's spirit.


Bring the water and sugar to a boil, and stir until the sugar has completely dissolved into the water.

Reduce the heat but make sure the mixture is still boiling.


Add the lilac blooms to the pot. While doing so, you can state your intention out loud.


Simmer for 20 minutes while stirring clockwise to welcome protection. The liquid will reduce significantly. If you double or triple the batch, you might have to let the potion simmer for up to 40 minutes to achieve the desired consistency.


Let it cool for five minutes, then strain in the container of your choice. Don't forget to squish all the syrup out of the flowers!


Let it cool down completely before putting the lid on, and keep the syrup in the refrigerator for up to a month.


Blow out the candle, say thank you again and enjoy nature's delicious flavours!


Variation: Lilac and Blueberries Simple Syrup


If you want to add a little bit of a kick to the recipe and give the Lilac Syrup a gorgeous deep purple colour, try this variation.

2 cups of filtered water

2 cups of granulated sugar

2 cups of lilac blooms

1/4 cup blueberries (frozen or fresh, but I use frozen)
